Holy Sweet Potatoes!
Have you ever seen a hungry bear eat for the first time out of hibernation? Well, this is what Baby Boo looks and sounds like when he eats sweet potatoes. He absolutely LOVES them. When the boys and I make sweet potatoes we like to spice them up. I have big guys in my house and they like their food to have big flavor! Baby Boo is not ready for that kind of fire, but we do want to introduce him to some flavor...slowly.
You can have so much fun with sweet potatoes. They are a versatile vegetable and can pair up with just about anything. Sweet potatoes are so healthy. Seriously they are like giving your baby a multi-vitamin. Packed with vitamins A, C, B's, E, and vitamin K, this super delicious vegetable is just what a developing baby needs.
We have several recipes that include sweet potatoes. The one below is the most simple sweet potato recipe for Stage 1 babies. You can add seasoning, mix with other foods, and change the consistency to match your baby's stage. I will add my varieties in future posts.
3-4 Ounces of Breastmilk
3-4 Ounces of water
pinch of Himalayan salt
Preheat your oven to 425 degrees. Wash your sweet potatoes with Veggie Wash. Cut them in half.
Lay a piece of parchment paper on your baking sheet and place the sweet potato halves face down.
Pour the water on the sheet and bake for 1 hour. You may need to add a little more water.
Remove your sweet potatoes when they are bubbly and brown looking.
Let them cool for a little then remove the center with a spoon. I put the potato center into the Vitamix with a little salt and the breastmilk. You may need to add more breastmilk to reach your desired consistency.
